Changes To Ridgewood
Nowhere are the changes to Ridgewood more apparent than on the east side of the railroad tracks. It began with a refurbishing of the railroad station and the addition of more covered areas for commuters waiting for their trains. The next step has been the elimination of most all of the vestiges of the auto culture, which included auto dealerships, gas stations, and the vehicle inspection station. In their place have sprung up apartment buildings and condos.
It’s ironic the apartments are positioned so near the train station. They arrive at a moment when jobs are being transformed into flexible activities not requiring a regular commute.
It’s easy for the casual onlooker to think on first glance that all the apartments were built for commuters to Hoboken/New York City. More likely it is the result of there being no more open spaces zoned for houses. Also, not everyone wants a house with all its required maintenance activities like cutting the lawn, raking the leaves, and shoveling the sidewalks. Even if you outsource these jobs, as most people do, it still is something one must manage.
A sad, unintended consequence of the outsourcing of yard work is that the ruthless efficiency of these businesses providing lawn services and snow removal has almost completely driven children out of these activities, which once were a fine source of pocket money and outdoor exercise. Not to mention the socialization skills learned by negociating the scope of work with your neighbor. We can bemoan all we want about children staying inside all day playing video games but we have contributed mightily to their reluctance to go outside. It was much easier to tell kids to go outside when there were monetary incentives and neighbors on the lookout for some hired hands. Now the children know their neighbors can’t be bothered and would much prefer making a monthly payment to taking the time to deal with them and supervise their yard work. Hard to blame the kids wanting to play videogames and text message with other equally ignored individuals over the Internet, instead of learning how to act like civic minded members of their local community.

I start today at the cheeseshop on Bleecker - unfortunately...there will be less pictures of Grand Central but in a positive note...a new canvas will be at my disposal to share with you my experiences - a new door has been opened my friends - now it'd time for me to go through.
Shot with the rarely used wide angle feature on my phone - looking north in fountain with arch, Empire State Building, dogs and of course...an orange construction cone.

Shrimp In Lemon Butter Over Fresh Pasta
Am in Manhattan for a few days cooking for the Irish side of the aisle - yet we remain staunchly Mediterranean.
Small dice an onion (two shallots would do better, but we planned poorly) and sauté in a butter/Olive Oil combo. Add in a lotta thin sliced garlic (though perhaps a bit less than Tom Keoughan’s recent 40 cloves) and some lemon slices. A dash of hot pepper would be welcome, but the audience requested I abstain. Let this all go then give it a healthy splash of white wine. Slice a mound of shrimp into bite sized pieces and have at the ready.
Prep the pasta while all this is happening (tonight we had fresh - it cooks fast) and time it so that you have a few minutes to work the shrimp into the lemon - butter - wine sauce, while leaving just enough cooking time to add the pasta.
Toss in a bit of parsley, grind some pepper, and bask in the glory of a thrilled clientele.
