Optimism
The truth is hard for a lot of people to handle. Let alone asking them to be optimistic when they don’t see the point. When someone is feeling weary and dissatisfied, like we sometimes do in mid August as we count the days until school begins, being told to look on the bright side is not going to change someone’s outlook all by itself. Most people at a minimum require a degree of hope as well as a cheerful reminder.
Optimism is an inclination to anticipate the most favorable outcome. It is an attitude fraught with peril, especially if the best outcome is you won’t come down with a bad case of Covid. Being optimistic or showing signs of your innate enthusiasm and confidence is truly for the bold among us these days.
Despite my own weariness and dissatisfaction with how well our country is vaccinating itself against this virus, my attitude remains optimistic. I sometimes think this is remarkable considering the inevitable heatwave to come this month in the northeast US and the intense uncertainty about whether students will be remote learning this coming autumn.
What keeps me optimistic and what I am convinced deserves our attention, after listening for months about Covid, is how we can combine young people’s genius and older people’s vision to solve our local & global problems. We’ve seen our own RHSAA take the first steps towards concocting such a brew of young and older viewpoints with the creation of an externship program and an alumni lecture series. Both are lofty achievements and are shining examples to students, parents, and alumni of an appropriate direction to take.
What comes next? How about we ponder this:
According to the CDC, “nearly one-fourth of adults aged 65 and older are considered to be socially isolated.” Maybe our next step with the RHSAA is to focus our innovative efforts on older alumni, to assist them in making genuine connections and build solid and supportive friendships in their later years. Whether this is with RHS students, or the more probable case, like-minded RHS alumni, the end result would be similar. The later would constitute a new set of initiatives for a previously overlooked cohort of alumni, most all of whom do not live in or around New Jersey. Keeping out-of-state alumni invested, literally and figuratively, in the future of RHS is an ambitious goal worthy of discussion by the wise minds in our RHSAA.

Paul Cortellesi On Cooking
Potatoes Anna
Thin slice, the long way (using a mandolin for consistency) enough Russet potatoes. How many are enough? - you’ll want your pan to be just under an inch thick when they are stacked. Dry the slices off with paper towels.
Take your family heirloom cast iron pan and give it a splash of olive oil, this is one of the few times when less is better with Olive Oil… layer in the potatoes and pour over a knob (ha… see photo) of melted butter, cover with tin foil and into a 425 oven for 20 minutes.
Uncover and give them another 25ish.

Hanging Planter/Lantern
I found another way to use our Hanging Planter/Lantern today. I used the glass from a glass votive that I keep around the house, filled it with water and placed cuttings from my Mandevilla plant that I’ve got growing in my garden inside the glass. The alabaster planter and the brass hoop provided the support for the cuttings so I didn’t have to get into taping or wiring them to stay arranged. I’ve been told that Mandevilla makes a good houseplant so I’m going to bring it indoors in the fall and see how it goes. If it stays healthy I’ll revisit this idea periodically through the year. Today it’s brightening up my kitchen on this pretty cloudy day in the #hudsonvalley.

Artisans are currently working on making more of these beauties, so check back in October when I expect to have them back in the shop. Thanks so much for supporting my small business!
