Sooner Rather Than Later
Schools opened this week in Ridgewood. When I grew up this event always occurred after Labor Day, but times change and in this instance I am for opening up sooner rather than later.
I say this because the we are in the midst of a huge public health debate. Whether or not it is the prudent thing to open our schools and businesses without vaccinations available for children under 12 and no common societal mandates regarding an airborne virus that can be contracted whenever large numbers of people engage with one another in public areas.
If we discover that we have been hasty and the rate of Covid incidents is too high for people to accomodate, then the sooner we realize this the better. Move on to the next plan. If we discover that our increasing rates of vaccination, mask wearing, and cleaning procedures have been enough to thwart another wave of Covid infections, then we will have begun the healing process that much sooner.
Let’s be honest about our situation. Covid is not a hoax. The long term effects have not been determined. Though we need to start working and living together if we ever want to put this tragic set of circumstances behind us.

With 100 year floods seeming to occur nearly every every six weeks, it struck us as a good idea to engineer our site drainage with sufficient capacity to handle the flow. 10 inch smooth bore pipe detours the rain water around the shop on its way to the Capoolong Creek. With hurricane Ida coming to pay us a visit in the morning, we’ll have lots of data to work with.
Lunch for the crew was grilled Knockwursts on a toasted baguette. For a side we tried a Bittman suggestion that fell rather flat: slice a handful of garden cherry tomatoes and sprinkle with a bit of Soy Sauce. Tom Keoughan, it’s that Umami thing you mentioned recently. It just didn’t work. We’re sticking with a nice vinegar instead.
